Wo früher die Rüben mühsam per Hand geschnitzelt, gekocht und gepresst wurden, um den Saft dann zu Rübenkraut eindicken zu können, verrichten heute Maschinen diese Arbeiten.

Die Grafschafter Krautfabrik verarbeitet während der rund 100 Tage dauernden „Kampagne“ zwischen September und Dezember über 30.000 Tonnen Zuckerrüben zu 8.000 Tonnen Kraut. Der Film zeigt den Weg der Rüben von der Anlieferung über Wäsche, Kochbehälter, Pressen und Verdampfanlage bis hin zur Abfüllung des fertigen Krauts in Kleingebinde (Haushaltsbecher).
