Description
English: We gathered an extraordinary cast from our hotels in Lisbon PortoBay Liberdade and PortoBay Marquês to make a "bolo-rei", a traditional Portuguese Christmas delicacy!

To make a 1.1 kg cake you'll need:^

Ingredients: 375g flour 15g yeast 65g water 50g sugar 6g salt 2 eggs 35g milk 3g orange zest 40g butter 15g sultanas 15g Madeira wine 5g fig leaf gourd jam 150g crystallized fruit 50g dried fruit (walnuts, hazelnuts, almonds, pine nuts).


Method:

1. Put 125g flour, 15g yeast and 65g water into a bowl. Knead and cover. Leave to rise for about 30 minutes.

2. Place 250g of flour, 50g of sugar and 6g of salt on a worktop. Add 1 egg, 35g milk, 3g orange zest and 40g butter. Add the yeast dough and knead well.

3. Add 15g sultanas previously soaked in 15g Madeira wine (about 24 hours before), 5g fig leaf gourd jam, 150g crystallized fruit, 50g dried fruit (walnuts, hazelnuts, almonds, pine nuts). Knead until it becomes an even dough.

4. Form into a ball and make a hole in the centre (like a large doughnut).

5. Place on a paper towel and leave to rise for about 25 minutes on a baking tray.

6. Preheat the oven to 180°C.

7. Brush the dough with the yolk of 1 egg.

8. Decorate with nuts and crystallized fruit.

9. Bake for 35 minutes.

10. Sprinkle with icing sugar and serve.
