Deutsch: Die Käserei der Oberen Bundalp im hinteren Kiental, Kanton Bern, Schweiz. Die alpine Käserei lagert ihren Bergkäse im Sommer an Ort und Stelle im eigenen Käsekeller. Jeder Laib trägt das Produktionsdatum und ein AOP-Signet. Die Käse müssen anfangs täglich, später in längeren Zeitabständen gewendet, kontrolliert und gepflegt werden.
Français : La fromagerie de l'Obere Bundalp (Bundalp Supérieur), au fond du Kiental, dans le canton de Berne, en Suisse. En été, la fromagerie alpine stocke son fromage de montagne sur place, dans sa propre cave à fromage. Chaque meule porte la date de production et un sigle AOP. Au début, les fromages doivent être retournés, contrôlés et soignés quotidiennement, puis à des intervalles plus longs.
Italiano: Il caseificio dell'Obere Bundalp (Alta Bundalp) nella Kiental posteriore, nel Canton Berna, Svizzera. Il caseificio alpino conserva il suo formaggio di montagna in loco, nella propria cantina, durante l'estate. Ogni pagnotta reca la data di produzione e il marchio AOP. I formaggi devono essere girati, controllati e curati quotidianamente all'inizio e successivamente a intervalli più lunghi.
English: The cheese dairy of the Obere Bundalp in the rear Kiental, Canton Bern, Switzerland. The alpine cheese dairy produces mountain cheese in the cheese vat every day in summer. This can be pushed over the wood-burning stove (on the right edge of the picture). The cheeses have to be turned, checked and cared for daily in the beginning and later at longer intervals. |
