This recipe is from the Cook Maldives cookbook, containing popular and traditional Maldivian food recipes for breakfast, lunches, snacks, and dinner meals.

Maldivian cuisine, food culture, and food traditions center around fish, especially tuna fish. Grated coconut or coconut milk is used in almost every dish. Maldivian spice blends are unique in their composition of spices. In addition to this, the abundant use of fish give curries unique flavors, when compared to Sri Lankan cuisine or some of the foods of the neighboring countries in South Asia.

Mango curry is a sweet and savory Maldivian style curry recipe. Soft, ripe mangoes work best when cooking this recipe.

Mango curry is usually eaten with rice or roshi, which is the Maldivian version of roti made throughout South Asia. People of the Maldives will usually eat this curry with another side or curry of choice.

Leave out the fish, and this recipe becomes an easy vegetarian or vegan dish from the Maldives.
