Category talk:Monument to Caterina Campodonico (Genoa)

I have figured out the problem I posted in my previous message (see below), and now I have a question about preferred methods: my approach to alphabetising is to use the DEFAULTSORT template. A previous user did the alphabetising by adding a vertical bar to the Category entry in the Commons article page, followed by the text s/he wanted to use for alphabetising. (The text was misspelt - Camponico, when it should have been Campodonico, and the word "Tomba" was first, when, in my opinion the person's name should be the criterion for alphabetising, but that's beside the point). Here's the point, and my question: which method of alphabetising is preferred? When I set out on this little project and searched how to alphabetise an entry, the DEFAULTSORT template is what I found. Is the other method (using a vertical bar followed by the desired alphabetisation) just as good, obsolete, better?

previous message for reference ---------------------

The Commons page https://commons.wikimedia.org/wiki/Category:Cimitero_di_Staglieno_(Genoa) (like many others) has many Subcategories listed. Many of these have not been alphabetised correctly, so I have been adding DEFAULTSORT templates to correct this. (For example, most of the Subcategory entries were named "Tomba [deceased's name]" and the previous alphabetisation (i.e., no alphabetisation) had them all listed under "T". I added DEFAULTSORT templates so that the entry would be alphabetised by the deceased's family name. So, "Tomba Giacomo Carpaneto" would be listed under "C" for Carpaneto, instead of "T" for Tomba. One Subcategory didn't co-operate, so to speak, with my re-naming. the Subcategory "Monument to Caterina Campodonico (Genoa)". 1) even after I added to the text, it still alphabetised under "T"; 2) it is not clear to me in the first place why this should alphabetise under "T". as the Subcategory name begins with "Monument". Is it because of the imbedded Category text "Tomba Camponico" ? That text doesn't make sense to me (I admit I am inexperienced in these procedures) in the first place; I think of text after a vertical bar (}) as being text that will appear in place (instead) of the text appearing before the vertical bar, but this doesn't seem to happen - I don't see "Tomba Camponico" in any display, only in the Edit screen; furthermore, "Tomba Camponico" is incorrect anyway - if anything, it should be "Tomba Campodonico". I am clearly confused, and would like help to proceed to clean this up.
