Description
Italiano: La zangola a botte orizzontale fissa, detta “reggiana”, ha il cilindro che contiene la panna fisso e la pala sbattitrice interna mobile. Questo tipo di zangola poteva essere azionata a mano o, come in questo caso, essere adattata al movimento meccanico generato da una motrice a vapore. Il principio della zangola è che sbattendo la panna a una temperatura piuttosto bassa avviene la cosiddetta inversione di fase e il grasso solidifica divenendo burro. In questa zangola la panna, inserita nel cilindro orizzontale, veniva agitata in modo rotatorio dallo sbattitore interno, azionato dalla forza vapore.
