The new feature of expanding an existing RAID-Z vdev in ZFS is now available in TrueNAS 24.10 Electric Eeel. This feature has been requested by users for a long time and is now available in OpenZFS. The expansion can be done by adding one drive at a time, as long as the new drive is the same size or larger than the existing drives in the vdev It is important to now that the RAID-Z type (Z1, Z2, Z3) cannot be changed after creation, and mirrors cannot be converted to RAID-Z.
