1冊。題簽「料理新製/いも百珍」、見返し題「新製料理/いも百珍」。珍古楼主人著。掲出本は百珍物の版本のなかでももっとも版種が多く、広く流布しているが、文化13年(1816)版にあたる(早印は、寛政元年[1789]9月刊の塩屋忠兵衛版)。板元は大阪書林河内屋直助。表紙見返しには「此書は当時流行の甘藷遣ひかた百余品をあつめ其外庖丁家の秘伝とする珍敷仕様を素人方即席に出来る調法の書なり」と記載する。浪叢隠士巨瓢による漢文序、「琉球売藷食図」、本草綱目などから甘藷に関する説を並べた雲太郎による「甘藷集説」、凡例、目録と続く。好評を博した『豆腐百珍』に倣い、本文では奇品63品・尋常品21品・妙品28品・絶品11品と4種に分けられ、計123品の甘藷料理の仕様を簡明に記載する。江北の雲太郎老人による跋文に「済世救民の微意を称美し給へかし」とあるように、江戸時代には飢饉に備える食糧として各地で甘藷の栽培が奨励されたが、取肴・烹物・菓子など多彩な調理を示した点で興味深い。(山本和明)(2019.11)
