Salnik (Russian: Сальник) or Salnyk (Ukrainian: Сальник) means caul fat in Russian and Ukrainian. It is also a name for a traditional Russian and Ukrainian dish where caul fat is filled with any kind of meat (usually liver, offal) and cereals (usually buckwheat groats) and baked.
