Bagoong alamang or "Ginamos" (in Western Visayas) Shrimp paste

Ginamos (Hiligaynon term for shrimp paste; Tagalog: bagoong alamang) is a fermented condiment commonly found in the Philippine and other Southeast Asian cuisines. It is primarily made from finely crushed alamang shrimp (Acetes sibogae) or krill mixed with salt (rice flour in some provinces), and fermented for several weeks or months, depending on the amount of salt used. Ginamos varies in quality and color and its flavor could be salty or spicy-sweet.
