English: Almond jelly or almond tofu is a jelly or tofu-like dessert originating in China. Originally, it was made with apricot kernal milk (which has an almond-like flavor) and agar; modern variants may instead use almond milk and gelatin. Despite the name, this dish does not contain tofu or soy beans.
