Although we usually meantomato catsup when we use the word catsup, there are catsupsmade of grapes, currants, goeseberries, cucumbers, peppers(Tobasco sauce), mushrooms, walnuts, etc. The word camefrom the East Indies, and is variously spelled. It properlyapplies to any hot sauce. What is Chow Chow ? It is a preparation of pickles with the addition of mustard,which in China is held in high esteem. Cauliflower is theleading or conspicuous ingredient, with cucumbers. All thespices may be added, to which mustard gives the characteristicyellow color. Chow Chow came with the Union PacificRailroad and the Chinese to America, and has been accepted asone of the national sauces. In fact, all vegetable things may be pickled ? Yes. Although the cucumber leads, various fruits and veg-etables are preferred in different parts of the country. As wego southward, red pepper grows in importance as an adjunct,for climatic reasons.
