Summary[edit]

Description
English: "Swallow" is the Nigerian word for the starch that goes with the soup. The starch is made out of a flour made from different grades of dried yams and cassavas. The more carefully handled and dried the yams, the more expensive the swallow. The starch/swallow is made up by adding the flour to hot water and turning, beating and cooking it until it is a smooth mound. It is served hot with the accompanying soup.
