Description
English: Unique cheese, from a centuries-old recipe, produced only by this sherpherd. Fernando is a shepherd from Sulcis-Inglesiente, more precisely from Fluminimaggiore. He took up an ancient recipe for making cheese. He was the first to have reintroduced it and every spring, during the Easter period, it is given as a gift among the inhabitants of Fluminimaggiore. The recipe dates back to about 2 centuries ago, su casu cottu is a cheese that is annealed up to four times, it is made in spring mainly due to the fact that, during flowering, the cheese takes on an even richer and more unique flavor. Legend has it that a shepherd servant, having to win back his beauty, made su casu cottu giving the cheese a heart shape.

Ha ripreso una ricetta antica per la lavorazione del formaggio. È stato il primo ad averla reintrodotta e ogni anno per primavera, durante il periodo pasquale viene dato in dono tra gli abitanti di Fluminimaggiore. La ricetta risale a circa 2 secoli fa, su casu cottu è appunto un formaggio ricotto fino a quattro volte, si fa in primavera soprattutto per il fatto che, durante la fioritura, il formaggio assume un sapore ancora più ricco e unico.

Leggenda narra che un servo pastore, dovendo riconquistare la sua bella, realizzò su casu cottu dando al formaggio una forma di cuore.
