llimètres sur moût gélatinisé. Son aspect aussi est un peu différent. Les encoches partant toujoursdu centre sont beaucoup plus fines et moins espacées. Le centre estplus relevé. Blanche jaunâtre au commencement et sèche, elle devientblanc de craie quand elle vieillit. Pour obtenir les colonies géantes (PL 1),nous nous sommes guidé par les indications de P. Lindner. Nousavons laissé tomber une goutte de moût de vin contenant des cellulesjeunes de quarante-huit heures, non pas dans un ballon comme Lindnerlindique, mais dans des vases profonds de Pétri, dans lesquels nousavions stérilisé une couche de moût agarisé denviron deux centimètresde profondeur. Le danger dinfection est plus grand, il est vrai, maison a lavantage de pouvoir aisément photographier de face la colonie,sans quil soit nécessaire de casser le ballon qui la contient. Il est recom-mandable de faire chaque ensemencement à double, pour éviter laperte de temps causée par des infections éventuelles.

Forme el dimension*des cellules(fig.\ ). - Après nu séjourde quarante-huit heures à 28°, les cellules sont ovales, presque sphérirques. Oii en trouve exceptionnellement dallongées. Emettent un ou deuxbourgeons, très rarement trois. Sur les cellules ovales, le bourgeon siforme dans la direction du pl.us grand diamètre. Une grande vacuoleoccupé lintérieur des cellules qui sont presque dépourvues de grainsréfringents à ce moment. Elles ont dès dimensions comprises entre4,5 et 7,5 p.. Celles des cellules ovales sont généralement 7 X 5 a. Lafermentation commence, assez active, au bout dun jour et demi à 28°.Ne forme pas de voile même après deux mois, mais un faible anneaudiscontinu à partir du troisième jour de lensemencement. Après septà huit jours, la fermentation est finie. Le liquide reste parfaitementclair. Le dépôt est abondant, lisse et bien agglutiné. L
