Italiano: La boule in rame degli anni Venti del Novecento è il simbolo del processo di lavorazione del pomodoro e del Museo. Ai primi del Novecento, con l'utilizzo delle boules - che fino agli anni Trenta erano di rame, con movimentazione a cinghia – e dei concentratori, costruiti per la prima volta in Francia, ma ben presto diffusi ovunque anche ad opera di industrie meccaniche locali, si giunse alla più conveniente e sicura produzione sottovuoto. La boule (localmente: bolla) consente di trasformare fino a 1800 litri di polpa di pomodoro proveniente dalla raffinatrice in concentrato, doppio o triplo, secondo il principio che un liquido sotto vuoto bolle a temperatura minore rispetto ai 100° e con una migliore resa qualitativa. Il concentrato, in uscita dalle bolle a 60-65°, viene trasferito attraverso le pompe alla linea di riempimento. I derivati del pomodoro che vantano la più antica tradizione produttiva sono i pelati e il concentrato, cui si aggiunsero successivamente altri prodotti, come la polpa pronta, le passate e i sughi. |
