As a farinaceous food for man, the Bean is considered far superior to any other legume, and next in impor- tance to wheat. The modern varieties leave little to be desired ; the great care given to their improvement has resulted in many superior sorts, greatly extending the season of use, as well as varying the quality or flavor.
