Four boilers and a like number of engines are availablefor illustration in this work. Laboratory.—Practical Dairy Work.—This work consistsof extended practice in the use of the Babcock test indetermining the percentage of butter fat contained in milk,skim milk, buttermilk, cream, whey, butter, and cheese.Particular attention is given to the use of scales in con-nection with cream testing. The use of acid tests for deter-mining the ripeness of the cream is considered. Dailypractice in the application of results obtained is afforded. Buttef-Making.—Five latest style cream separators fur-nish practice in the removal of cream from milk. Acombination churn, a trunk churn, and a table worker willillustrate the operations of churning and working butter.

C/) X < THE EXPEIilMKNT STATION. 151 One and two-pound molds, and cutting boxes illustratethe methods of finishing. All work in this line is per-formed by students under the direction of the instructors. Cheese-Making.—The nianufacture of full cream Cheddarcheese is considered. Attention is given to the small sizesknown as Young Americas. Some partly skimmed milkcheese is made to illustrate the effect of the removal of aportion of the cream. The use of various rennet tests istaught, also the hot iron test. Small vats are used in thisw^ork in order that each student may have an opportunityto carry the work through from start to finish. EXPENSES. Fees.—There will be no fees except a breakage deposit of$3.00, a portion of which will be returned at the close of theterm. This deposit is mainly to cover breakage of glass-ware in the laboratory, and in case of no breakage the feewill all be returned, except a small fee for material. Board and Lodging is obtainable in Corvallis at $3.0
