Description
English: This is the picture from last Eid when there is a tradition in my family to indulge upon recipes from the Muslim Kitchens..since we belong to a Non-Muslim family but we believe to celebrate such and such cross cultural cuisines beyond the boundaries of only one community. And yes if we talk about the title of this picture,"Amma ka Rogan Josh", I chose this title because my mother has inherited this recipe from her mother, and we are trying to preserve this recipe as a heritage to my Indian culture of multiculturalism and appreciation of old age recipes.

Rogan (روغن) means "oil" in Persian, while Josh (جوش) means "heat, hot, boiling, or passionate". Also Rogan implies to the red colored curry, the extensive use of Kashmiri red chillies being the reason.

Rogan Josh is a curry based dish comprising lamb or mutton pieces simmering in the flavored stew till the Rogan(fats/oil) gets separate from the meat. Onions and yogurt are the original thickening agent to the gravy but tomatoes are additional incorporation in the recent centuries. ( Source- The Great Curries of India, Panjabi, Camelia,1995)

Rogan josh is a signature dish of Kashmiri cuisine and is one of the main #dishes of the Kashmiri multicourse meal (the wazwan). The dish was brought to Kashmir by the Mughals, the date is quite unclear, whose cuisine was, in turn, influenced by Persian cuisine. The unrelenting summer heat of the Indian plains took the Mughals frequently to kashmir , which has a cooler climate because of its elevation and latitude.

So,yes this is one of the variations of Indian curries tracing their roots back in history and cherishing our present celebrations. And through this contest and my picture uploads ,I m sure to contribute towards the rich food cultural history of India and spread the same.
