Description
English: The upper section of the winery was formed of two sections where the grapes were tread underfoot and so crushed. The grape juice flowing down through a small hole was collected from there and brought inside jars for fermentation. When the fermentations process was completed the grape juice was stored in wine jars to be used daily. No additive substance was included in the wines to be used in the ceremonies in the churches in Zelve Ruins and this wine was offered to the religious community who came to the ceremonies. In the space on the left side of the winery the remaining Grapes were boiled in large batch bends to be made into molasses. A government site (and other sources) place the winery in the "first valley".
