English: I love a good pork trotter. My definition of good is that it should not be too fatty, but the skin should be soft and gooey, cooked long enough for the gelatins to break down into a silky mouth-filling experience. And this was it.
The cotechino sausage was very flavoursome, full of herbs to lift the palate and providing a crumbly textural counterpoint to the silky skin and tendon. I can imagine this is what a silk purse made from a sows ear would be like :) I nearly licked the plate clean to get all the unctous juices. --- Yum! A great Italian restaurant with a great impression of a modern Roman Trattoria. Casual, yet stylish. Not too expensive either!
