| Description |
English: This is a sweet preparation that's generally been prepared during the eve of Yugaadi in karnataka and surrounding areas of South India. There are two parts to the preparation. The first part is creating the stuffing with Toor Dal, Split Chickpeas, Dry Ginger Powder, Cardamom Powder, Fennel Seeds, a bit of nutmeg, Coconut shavings and equal quantity of Jaggery which is cooked to complete softness and ground in a wet grinder to a fine, thick, wet paste,the consistency of which must support creating small balls. The second part is the wrapper that holds the stuffing together. This is done by kneading out a dough made of refined flour (Maida in common tongue) with a lot of oil. The thin film of this wrap is carefully wrapped around the stuffing and carefully flattened by trained fingers and palm (not rolling pin). Now this is heated / roasted on an iron girdle / pan and roasted with a generous spread of Ghee and served hot with a spicy Potato and Eggplant / Brinjal side dish (Alugadde Badanekayi Palya). |
