he MessHall \d joining the Recreation Building tothe east is the Mess Hall, a double build-ing with one end for nurses and the otherfor orderlies, and with independent coalrooms and pantries. The KitchenPavilion The kitchen is planned w ith I he en-trance for supplies on the service court,the checking office being just inside thedoor, xvith vegetable storage adjoining.Directly opposite the door is the refriger-ator, with the grocery and milk room onone side and the meat room on the other.The steam kettle, vegetable steamer andcereal cooker, placed back to back withthe coal range, are in the center of theroom. The vegetable preparation room ison one side and the bakery on the other. The part of the kitchen open to order-lies and nurses is reached from the con-necting corridor. The War Demonstration Hospit a l the public space from the kitchen proper.Food cars remain in the kitchen betweenmeals, and pick up their loads at the pas-lr\ table, tea and coffee urns and cookstables. Refrigeration is supplied to the storageboxes in the Kitchen Building b\ aportable ice machine of American manu-facture such as has already been put intooperation in France. The LaundryPavilion The Laundry Building has two receiv-ing rooms, one for infected clothing, linenand bedding, which must pass througheither the sterilizing washer or the steamand formaldehyde sterilizer, and the otherfor ordinary soiled linen. Mattresses and pillows after steriliza-tion are stored at the west end of thebuilding, while the linen after drying andpressing is stored near the east end ontables and in bins.
