At the end of the little bar a cocher ishaving his morning tipple, the black brim ofhis yellow glazed hat resting on his coarsered ears. He is in his shirt-sleeves; coatslung over his shoulder, and whip in hand,he is on the way to get his horse andvoiture for the day. To be even a cocherin Paris is considered a profession. If hedines at six-thirty and you hail him to takeyou as he rattles past, he will make hisbrief apologies to you without slackeninghis pace, and go on to his plat du jour andbottle of wine at his favorite rendezvous,dedicated to The Faithful Cocher. Anhour later he emerges, well fed, revives hisknee-sprung horse, lights a fresh cigarette,cracks his whip like a package of torpedoes,and goes clattering off in search of a cus-tomer. marvels of neatness. The butcher-shop,with its red front, is iron-barred like thelions cage in the circus. Inside the cageare some choice specimens of filets, roundsof beef, death-masks of departed calves,cutlets, and chops in paper pantalettes.On each article is placed a brass sign withthe current price thereon. In Paris nothing is wasted. A placardoutside the butchers announces an Oc-casion consisting of a mule and a don-key, both of guaranteed premierequalite. And the butcher! A thick-set,powerfully built fellow, with blue-blackhair, curly like a bulls and shining inpomade, with fierce mustache of thesame dye, waxed to two formidablepoints like skewers. Dangling over hiswhite apron, and suspended by a heavychain about his waist, he carries the longsteel spike which sharpens his knives. Allthis paraphernalia gives him a very fierceappearance, like the executioner in theplay; but you will find him a mild, kindlyman after all, who takes his absintheslowly, with a fund of good humor af
