DOLE RECIPE 46 13 BAKED PINEAPPLE-DATE PUDDING Comliine i cup drained Dole PineappleChunks. 1 cup cii0(i(ied dates. 1 cupcoarsely chopped walnuts. Sift I/2 cupflour with 1 tsp. baking powder andV2 **!• salt, add to Iruit, mix well.and set aside. Beat 3 egg whites stiff:set aside. With same beater beat .3egg yolks with 1 tsp. vanilla; grad-ually beat in % cup sugar. Stir infruit and flour mixture, then fold inbeaten whites; bake in a greasedshallow 8 X 12 pan in moderatelyslow oven (325°) about 35 minutes.Break in pieces, serve warm or coldwith whipped cream. Heat 21/2 cujis (a No. 2can) Dole Oushed Pineapjile just to boiling, re-move from heat, stir in gelatin and 1 tbsp. lemonjuice. Pour half this mixture into 9 x 4 x 4 loafpan, chiii until firm. Beet Layer: Add 1 tbsp.plain gelatin to ^ cup cold water. Heat IV4 cupsbcel-l)(jiii(l-and-water to boiling, remove from heat,stir in gelatin. Add 1 tsp. salt, 3 tb.sps. sugar.3tbsps. vinegar or lemon juice, and remaining pine-apple-gelatin mixture. Cool until it begins to thicken,then fold in 2 cups chopped cooked beets, 1 cupdiced celery, 2 tsps. minced onion, 2 tsps. horse-radish.
