n.One of these gentlemen was connectedwith the Department of Charities andCorrection, and had for a long time been interested in all problems pertainingto diet, and especially diet in publicinstitutions. Much information re-garding trade conditions was obtainedthrough an American, who was therepresentative of a large New Yorkcommercial agency. Data were alsosecured from leading Cuban merchantsand from Americans of long residencein the island. With the exception of a short visitto Matanzas and Guines, the time waspassed in Havana, so that what is saidof markets, etc., applies especially tothat city. However, so far as could be The Boston Cooking-School Magazine learned, dietary conditions are muchthe same in all the large towns of theisland. Havana contains many grocerystores, large and small, and markets each merchant having a small spacefor the display of goods; and the va-riety shown is very large. This methodrenders it possible to transact a largeamount of business in a short time.

Kitchen of a Private Hospital where fruits, vegetables, meats, fish,etc., are sold in much the same wayas at the Washington Market in NewYork or the Centre Market in Wash-ington. The principal market was lo-cated in an old building; but the stallsseem well arranged, and the whole placewas orderly, and appeared to be ingood sanitary condition. In fact, thewhole city of Havana was noticeablyclean in this respect, being superiorto many American cities. The bulk of the food consumed inCuba is imported, Spain being appar-ently the most important source ofsupply. This is to be expected, asa people of Spanish descent would nat-urally have the tastes and habits ofthe mother country. American firmswere well represented, and the provi-sion trade with the United States isgrowing.
