It is now called chyme, and consists of starches whichhave escaped the action of the salivary glands, proteids which have escaped thatof the gastric juice, fats which have not been acted upon at all,- indigestiblesubstances, and also a certain anwunt of saliva and gastric juice. In the duodeuumthe chyme meets with two lluids—bile from the liver, and pancreative juice from thepancreas. Bile acts upon the fats; pancreatic juice, aided also by the secretionsof the intestinal glands, acts upon the proteids and starches, so that all kinds offood are here rendered digestible. The chyme now becomes of a milky appearanceowing to the emulsification of fatty matter, and is called chyle, which passesthrough the small and large intestines, digestion and absorption continuing untilonly waste matter remains.
