(This is a little known bread made by Maia, from the north east) Yield: 10 tanjas Sticky rice 150 grams White jaggery 30 grams Milk 300 millilitres Tomato 2 numbers Sugar 150 grams Method: • Parboil rice with milk. • Leave rice to cool and rest for 6 hours. • Grind into a thick paste. • Mould paste into small circular bowl-like shape. • Pour sugar, enough water to cover tomatoes and boil till peel separates from tomato. • Sugar syrup should be very thick but should not caramelise. • Dice stewed tomatoes into small pieces. • Steam rice bowls and stuff with tomato dices and syrup. • Serve immediately.
