en drawn off and sugar and water are added.The milk of the cocoanut is a common and popular beverage, being simplypoured out from the green nut; even when the nut is plucked from thetrees on a warm day the milk is found to be cool and refreshing. Otherfruits used for drinks are the guanabana or sour-sop, and the anona orsweet-sop; these are the green prickly-skinned fruits with white flesh andblack seeds, which are seen displayed on the cafe bars. The drink calledensalada (salad) is a beverage composed of various ingredients, the choiceof which is determined by the fancy and skill of the composer. It is notunusual in a Havana cafe to see a person order simply a glass of ice-water and sit down at a table to drink it; a Cuban law requires ice-waterto be provided free in every cafe. It is quite proper for ladies to go intothe cafes of the better class; in those adjoining Central Park, after thepark concerts or during the theatre intermissions, one finds there a gay 84 THE STANDARD GUIDE.

A KIOSK WHERE COOLING DRINKS ARE DISPENSED. throng of handsomely dressed men and women. There are in the cafes alarge and varied assortment of sweet cakes and a variety of ices, madefrom the guanabana, melon, orange, pineapple, and other fruits. Oneice cream is named jai alai, after the famous game. Ices are usually servedwith barquillos or long rolled wafers. Sweets and cakes are displayed ingreat profusion in front of little shops everywhere throughout the city,and sweets sellers go about the streets bearing trays of confections ontheir heads. Cofifee is served in all cafes. Cubans burn the cofTee bean to a cinder;they say that this process destroys the toxic qualities. Milk is boiledand salted to keep it fresh. The waiter brings the cofifee-pot in one handand a pot of boiling milk in the other; the combination of charred coffeeand salted milk some persons like at first taste; some learn to like it;some experiment with varying proportions of coffee and milk and neverquite determine
