When a bargain is concluded, the lot is carried to the Waag orweighing house, by carriers who are appointed by the corporation. Thereare four groups of carriers, each wearing a differently coloured hat. Eachgroup takes the cheese from a certain part of the market place and carriesthe cheese to the weighbridge indicated for his group. When the cheese isweighed by a sworn official, the carriers bring the cheese to the barges ofthose merchants living outside the town or to the warehouses. The producermust pay to the corporation a fee of one shilling per 50 kilos for carryingand weighing. The transactions are all strictly cash. The cheeses are cleansedand oiled with linseed oil before they are brought to the market. 64 THE POLDERS CALLED DE SCRERMER AND D E BEEMSTERr At the beginning of the 17th century there were between the townsAlkmaar and Purmerend, two lakes separated by a narrow strip of marsh-land. These lakes have been laid dry and so transferred into a large area offertile clayland. The tram leads over the ringvaart (circle canal) of the polder deSchermer, which was laid dry in 1632 and has an acreage of 10976 acres;the level is about 13 feet below the average level of the Zuiderzee. Thislevel is maintained by means of 50 windmills and is kept in winter 6inches lower than in summer. 14 of these windmills are used to bring thewater into the lower canals and the other 36 to bring it gradually higherup from one level to the other, till it is high enough to flow off into theZuiderzee. On the spot where you will visit the mills, two mills pump thewater on to the first higher level called kolk, and from there it ispumped by two other mills into the circle canal.
