English: The Harvey Girl Legend
Fred Harvey's verbal agreement with the Atchison, Topeka and Santa Fe Railroad in 1876 let him develop something that was lacking -- a line of deluxe restaurants along the railroad's line throughout the southwest. One of his secrets to success were the Harvey Girls. These young women often immigrants had to be of "good character , attractive and intelligent 18 to 30" to be hired as waitresses. They were not to wear jewelry or rouge and had to maintain spotless uniforms-- white for bradkfast and lunch, black and white for dinner. ( as shown here) They were trained to high standards and always courteous, They were expected to remember orders and did not right them down. All food was carried on a tray, even a glass of water.Waitresses signaled their customers' beverage choices to their busboys by the position of the guests' cup and saucers.In the chain 70 year history an estimated 100,000 young women wore the uniform.
