Description Purple salsify. As noted to Lisa Nakamura on Instagram: different than cultivated salsify but root still edible. Per wikipedia, tastes of oysters (another name is oyster plant). Young roots can be eaten raw, older ones better in soups or stews (it says). And apparently shoots can be used like asparagus but I feel like they say that about every edible wild plant with thick stem.
