Description For many of the marmalade recipes I found, you repurpose the discarded seeds and some other bits (in the case of kumquats, the stem ends) as a pectin source by tying them up in some cheesecloth. (Don't have cheesecloth? Here are some of the substitution suggestions my friends made in response to a post about a scarcity of cheesecloth at the food stores near my folks' house: stockings/pantyhose, paint bag filters, muslin, voile.) And my friend Elisabeth noted that hardware stores will carry inexpensive food grade cheesecloth in the painting section. So in case, you too, find there's been a run on the grocery store, check out those other options.
