Summary

[edit]
Description
English: This is a plate with "tavuklu pilav" (Turkish pilaf with shredded chicken) from the Turkish cuisine. The file title is "Muhallebici" because this has been a staple dish in what the Turks call "muhallebici"s of Istanbul. The "muhallebici" is something like a café or restaurant where traditionally young people (lovers) meet to eat something sweet and chat. (This is about Istanbul's popular culture, of course anyone can go to a muhallebici.) "Muhallebici" means a shop that sells "muhallebi", a very typical Turkish milk pudding. Of course they sell all the other puddings of Turkey also, but -although not any more- stayed away from selling desserts with "şerbet", like baklava etc. They sold (sell) tavukgöğsü, keşkül, kazandibi, su muhallebisi, kazandibi etc. As not everybody comes to eat only sweets (desserts), they had very few staple dishes like chicken broth (with orzo / şehriye) and the "tavuklu pilav". The reason must have something to do with the fact that making "tavukgöğsü" required chicken breast meat and they had to buy the whole chicken in old times. Please note that "tavuklu pilav" is sold in streets of Istanbul, just like "nohutlu pilav" (Turkish pilaf with chickpeas) since long times. Orhan Pamuk tells the story of a person who did the job in one of his novels.
