Description : Le bâtiment est représentatif d'un type de bâtiment industriel, le moulin à farine. Les premiers moulins à farine de la vallée du Saint-Laurent remontent au milieu du XVIIe siècle, alors que les seigneuries commencent à se peupler. Le type le plus répandu en Nouvelle-France est le moulin-tour, conçu selon des traditions européennes et conforme à une technologie séculaire. Celui de Vincelotte en est une illustration notamment par sa tour cylindrique en pierre. À l'origine, le moulin était doté d'une calotte pivotante et d'une hélice composée de quatre ou six pales. Actionnées par le vent, ces pales transmettaient l'énergie à la meule grâce à un mécanisme aujourd'hui disparu.
