Ochsenschwanz-Suppe
Man schneidet den Schwanz in kleine
Stücke & brät Sie dann schön braun, gibt
sie dann in einen Topf und bedeckt sie
mit Wasser und 1 Löffel braunes Mehl u.
gibt Gewürz daran. Nun füllt man das
übrige braune Mehl nach und läßt es gut
durchkochen. Zuletzt gibt man alles durch
ein Sieb, auch die Brühe wenn der Ochsenschwanz
dann gekocht ist und schmeckt die Suppe
dann gut ab. Beim anrichten gibt man
auf jeden Teller ein Stück Ochsenschwanz.

Nieren-Suppe
Die Nieren weden in Scheiben geschnitten
u. dann zugleich mit Zwiebeln braun gebraten,
dann tu man das in ein Topf und füllt
Wasser darauf, & 1 Löffel braunes Mehl, Salz
u. Pfeffer u. läßt dies garkochen. Inzwischen
hat man braunes Mehl in Brülin??? ausgekocht &
gibt das alles durch ein Sieb u. die Brühe von
den Nieren auch mit zu, und schmeckt die
Suppe dann gut ab, mit Salz, Pfeffer, Papri-
ka, englische Sauce, Madeira und Rotwein
Beim anrichten in jeden Teller einige Nieren-
stücke.
