Auvergne, Puy-de-Dôme, Hautes-Chaumes du Forez
Jasserie (ferme d’estive) typique des monts du Forez. La construction de ces bâtiments remonte à la fin de la révolution française, période à laquelle la pratique de l’estive par les paysans connaît un essor. Usuellement en été, les femmes travaillaient dans la jasserie; elles avaient la responsabilité du troupeau, le soignaient, le trayaient et transformaient le lait cru en fourmes.
Après le déclin de la pratique de l’estive, le jas n’est plus entretenu. En 1957, après d’importants travaux de réhabilitation, dont la réfection du toit de chaume, ce jas s'ouvre au public.
C’est le seul système d’estive français où les femmes géraient le troupeau et la transformation fromagère. Le jas familial, occupé de mai à octobre, abritait femmes et bêtes et servait de lieu de production des fourmes fermières d’Ambert et de Montbrison.
Aujourd’hui la fenière du jas n’accueille plus les balles de foin mais un petit musée sur le thème de la transformation fromagère.
