En forme de dôme semi-enterré le yakh-chal servait la plupart du temps à stocker de la glace, mais aussi parfois à stocker de la nourriture. En Iran, la technique remonte à l'antiquité (IVe siècle av. J.-C.), elle permet de stocker de la glace en plein été dans le désert. La glace était amenée des montagnes environnantes pendant l'hiver et était ensuite stockée dans des yakhchals. Le yakhchal est un grand espace enterré (jusqu'à 5 000 m³) aux murs épais bâtis avec un mortier spécial appelé sarooj, composé de sable, d'argile, de blanc d'œuf, de chaux, de poils de chèvre et de cendres dans des proportions spécifiques pour empêcher les transferts de chaleur. Cet espace est souvent relié à un qanat (système d'irrigation souterrain permettant de récolter les eaux d'infiltration). Ces structures ont été construites et utilisées surtout en Iran (voir wiki "glacières" pour les utilisations dans le reste du monde).
