I think I've finally found the sweet spot for my fried rice recipe. Tastes just right. I make no claims of the authenticity of this recipe. I have no idea how the Chinese make it :-) Ingredients cooked (boiled) rice======================2 cups prawns (cooked and peeled)===============100 gm sausages / other cooked meat==============as required onoin=================================1/4 th of medium size ginger================================1 inch piece (finely chopped) soya sauce============================1 tsp vinegar===============================1 tsp egg==================================1 fresh ground black pepper================a pinch oil===================================3 tbsp Method 1. The cooked rice should be cooled to room temperature at least. It's best to use leftover rice from the previous day. 2. Add a pinch of salt and the pepper to the egg and beat till frothy. 3. Squeeze the prawns so that they are dry. 4. Slice the onion finely. 5. Heat a fry pan on high heat. The pan should become very hot before you add the oil. 6. Add 2 tbsp of oil. The oil will start smoking. Immediately add the finely chopped ginger. Fry for 10 seconds. Add the prawns and stir fry for 2 minutes / until dry. 7. Add the soya sauce and vinegar and stir. 8. Add the sliced onion and sausage / cooked meat and stir fry for another 2 minutes. 9. Add the rice and salt to taste. Stir fry until the rice is hot. 10. Transfer the rice to a closed vessel to keep hot. 11. Heat 1 tbsp of oil in another pan until hot. 12. Add the beaten egg to it. As the egg solidifies at the base of the pan, immediately lift it with a fork such that the liquid uncooked part drains back into the pan. Transfer the omlette into the vessel containing the rice and cover. The egg will cook fully with the heat of the rice. Repeat the process of lifting the egg 2-3 times until it's all cooked. |
