Amount of Milk used. — The amount of milk andcream produced by farmers for distribution yearly isover 740,000,000 gallons. This does not include the stilllarger amount used for butter, cheese, and condensedmilk. The average quantity of milk purchased by theurban population is twenty-three gallons a year for eachperson. THE CITY FOOD SUPPLY 169 The Dairy Industry. — Dairying is so widely practisedhere that the United States is regarded as the leadingdairy country of the world. In 1908 the total valueof all dairy cows was over seven hundred million dollars.

A Modern DairyNote the cleanliness of the barn, the cows, and the men In the northern and eastern sections of the UnitedStates, dairying is carried on very extensively. In largeparts of these sections it is the chief occupation of thefarmers. The chief dairy states are New York, Iowa,Pennsylvania, Wisconsin, Illinois, and Ohio. The General Use of Milk. — Milk is one of the mostcommon articles of food. Next to bread it is prob-ably more commonly used than any other food. Itforms a large part of the food of all children until they i7o HEALTH IN HOME AND TOWN are five years of age. In cities nearly every familyreceives a daily supply of milk or cream. In the north-ern states, each individual on the average uses twothirds of a pint daily, while in the southern statesscarcely one half of this is used. The Need of Clean Milk. — Milk is usually takenraw, so if it contains disease germs, they are notkilled by the heat of cooking. Germs increase veryrapidly unless the milk is kept near ice
