Шляпка диаметром 2-8 см, вначале выпуклая, ширококолокольчатая, с загнутым краем, затем выпукло-распростертая, с прямым, тонким, слаборубчатым краем, гладкая, гигрофанная, в сырую погоду клейкая, желто-охряная, оранжевая, светло-желтая, медово-желтая (характерный признак), у зрелых грибов оранжево-коричневатая или ржаво-коричневатая с беловато-желтым краем. Пластинки приросшие с выемкой, иногда почти свободные, тонкие, широкие, средней частоты, длинные лезвия чередуются с половинчатыми, вначале светлые или светло-желтые, затем охряные, с прожилками и зазубренным краем, ровные или извилистые. Ножка длиной 3-8 см и толщиной 0,3-0,8 см, цилиндрическая, часто суженная к основанию, прямая или изогнутая, полая, волокнистая, вверху светло-желтая с темноватыми точками, ниже бархатистая, темно-коричневая с легким мучнистым налетом (характерный признак), в старости почти полностью черная и жесткая, без кольца. Мякоть тонкая, мягкая, водянистая, кремовая, беловатая, с невыразительным запахом и вкусом. Произрастает с конца августа до ноября или декабря месяца, в лиственных и смешанных лесах, предпочитает валежины и пни, а также сухостойные, ветровальные и поврежденные деревья лиственных пород (осина, ива, тополь, черемуха, реже клены, липа и береза), в садах и парках, группами (пучками), часто. Вкусный съедобный гриб, используется свежим (предварительное отваривание 15-20 минут), для засолки, консервирования, сушки, приготовления грибной икры, хорошо сочетается с рыбой, птицей, мясом и любыми овощами. Опенок зимний можно спутать со съедобным Опенком летним (Kuehneromyces mutabilis), у которого на шляпке присутствуют 2-3 концентрические зоны разной окраски, а на ножке хорошо заметно тонкое кольцо, быстро исчезающее и оставляющее коричневый след, а также с Галериной ядовитой (Galerina marginata), у которой коричневато-красноватая шляпка имеет колокольчатую форму с бугорком, по ее краям видны радиальные бороздки, а на ножке также заметно желтовато-коричневатое кольцо. Опенок зимний подавляет рост и образование метастазов у саркомы-180. Многолетние эксперименты, проведенные среди японцев, показали, что у людей, принимающих препараты на основе Опенка зимнего, не было ни одного случая возникновения рака простаты или лимфомы. Согласно исследованиям английских медиков, иммуномодуляторная способность Опенка зимнего помогает сбалансировать иммунную систему и поддерживать печень в здоровом и работоспособном состоянии. Лабораторные опыты подтвердили способность Опенка зимнего оказывать благоприятное воздействие при старческом слабоумии и болезни Альцгеймера.
