Description I'd read in another marmalade recipe that you can also use a peeler while the fruit is still whole to just remove the outer layer of rind. But that author warned if you do that, the rind and jelly part of the marmalade may tend to separate. I don't know if that is accurate, but I decided to leave a small amount of the pith just in case.
