Description

Under Harvey Wiley, shown here at the bench with two unidentified staff, the U. S. Department of Agriculture published a ten-part study entitled Food and Food Adulterants from 1887 to 1902. This helped provide the scientific basis behind the movement to institute national food reforms in the U.S.
