English: Evaporative cooling: the fastest (hotter) particles are the one with the highest chance to escape, leaving behind the slower (cooler) ones.
This is essentially why we sweat. (Dark means slow, light means fast in the gif below. Particles interacting with a Lennard-Jones potentials, plus a uniform gravitational field pushing them down.)
