Description Cow-parsnip (Heracleum maximum) is a tall plant with 3-lobed leaves and large clusters of white flowers commonly found along roadsides and wet areas throughout low- to mid-elevations in the park. Plants in the Heracleum spp. family contain substances called "furanocoumarins" in the outer skin and sap that act as a natural defense against fungal attacks for the plants, but exposure to them in people can cause skin irritation. Cow-parsnip is relatively mild, and historically many native peoples have eaten peeled cow-parsnip stems and roots with no ill effects, but watch out for the related Giant Hogweed (Heracleum mantegazzianum) which is classified as a Federal Noxious Weed. High levels of furanocoumarins in its sap can cause severe skin irritation, rashes, and blisters. Giant Hogweed is much larger than Cow-parsnip, with red-flecked or reddish-purple stems.
