Français : Couscous avec "osbanes de sardines" c'est à dire des paquets constitués de deux sardines entre lesquelles se trouve une farce épicée constituée en majorité de feuilles de blettes, persil et d'oignons blancs ainsi que de sardines, le tout haché et mélangé avec des épices (paprika-poivron rouge moulu, curcuma, graines de coriandre et carvi moulus, sel et poivre noir) et un peu d'huile d'olive. Il est possible d'ajouter de la menthe séchée moulue et de la harissa maison "arbi". Ce couscous réalisé dans le cadre familial est présenté avec des poivrons verts frits, des gros morceaux de carottes , de courge et de pomme de terre. Le fil de cuisine utilisé pour maintenir les sardines autour de la farce pendant la cuisson a été enlevé au moment du dressage du plat. Cette recette est une spécialité de la région du Sahel en Tunisie (gouvernorats de Sousse, Monastir, Mahdia)
English: Couscous with sardines' osbane: these osbane are made up of two sardines tied together aournd a spicy filling consisting mainly of chard leaves, parsley, white onions and more sardines, all chopped and mixed with spices (ground paprika, turmeric, ground coriander and caraway seeds, salt and black pepper) and a small anount of olive oil. Dried ground mint and homemade harissa “arbi” can also be added. This family-style couscous is presented with fried green peppers, chunks of carrot, squash and some potatoes cooked in the couscous sauce. The sowing thread keeping the sardines together during cooking has been removed before eating. This recipe is a specialty of Tunisia's Sahel region (governorates of Sousse, Monastir, and Mahdia).
