| Description |
This was taken at the site of ancient Ashkelon, by Israel's Mediterranean coast. Olive trees were tremendously important to the ancient Israelites, later Judeans, and all ancient peoples in the Holy Land. Only grain and grape vines were more crucial to the ancient diet and economy. The olives were doubtless eaten fresh when in season, but there is no clear evidence for their pickling in this region prior to the Hellenistic period. Instead, olives were important mainly for their oil, and olive presses are found throughout the holy land. The oil was used for lighting (in lamps) and as a food. Bread would be dipped in oil both to add flavor and to furnish crucial fats that would sustain ancient workers longer through the day than carbohydrates alone. |
