Description
English: After about an hour of slow cooking in stock, the smoked porcupine expanded to reveal three layers of flesh - the dark outer skin with the taste and consistency of ham rind; a pink salty inner layer with bite, and another white delicate outer layer, all three layers peeling away in delicious strips. The Porcupine gave the stock a heady smokey aroma and deepened its flavour.
