One of the most delightful Vegetables is the Spinach, and a most welcome addition to the table in early spring. It is by far the most healthful of Vegetables, for it contains a large per cent of iron, a most necessary tonic. Physicians tell us that if people would eat more Spinach they would be much better off- Sow seed in September or October, pro- tect the young plants with a little loose straw over winter and in early spring you will get an abundant harvest. American Savoy—A heavy cropper of fine quality and very hardy; succulent leaves, curled and crinkled like Savoy Cabbage. Hardiest and most productive sort. Pkt, 5c; oz., 10c; lb., 40c. Victoria I,ong Standing-This thick variety is distinguish- ed bv the exceedingly dark green color, and also for its long-standing qualities and crinkled foliage, especially valuable for summer use, resisting heat to a remark- able degree. Pkt„ 5c; oz., 10c; lb., 40c.; 3 lbs., $i.oo. Everlasting—Available for use during the hottest months of midsummer, when ordinary spinach is not to be had. Quite different from the true sninach, but an admirable substitute. Cook like others. Pkt., 5c.: oz., loc; lb., $1 Oyster plaijt, or Salsify. One of the most delicious of all root vegetables. So hardy that it can be left in the ground all winter, and dug as needed, whenever the ground thaws. Stew until tender, then cook exactly like oysters with pepper, cream and butter. Try a large bed of them this year. They are de- lightful. I,arge White—A quick grower; very fine flavor. Pkt, 5c; oz.. loc.: lb., $i.oo. Sandwich Island Mammoth—Like the above but twice the size. Cannot be praised too highly. Pkt., 10c; oz., 15c; lb., $1.40. Parsuip, One of the few winter vegetables. The roots are per- fectly hardy and are improved in flavor by the action of the frost. Roots can be dug during thaws in winter or very early in spring, when a change of food is most relished. They are boiled whole, then sliced thin and fried brown with salt pork. Improved Guernsey-This is not the coarse Stock Guern- sey, but the table variety of that name, the sweetest finest grained Parsnip grown. Smooth, thick roots' about 12 inchps long. Very fine stewed, fried, etc Pkt' 5c.; oz.^ioc; lb., 60c Improved I,ong Smooth Hollow Crown—An old standard variety, of fine quality with long roots. This is the most raised for stock feeding, and for that purpose it is truly a valuable root. All cattle relish Parsnips im.nence- lv and thrive wonderfully when they feed freely upon them.
