Après que le sire Aymon ait fait don de ses biens aux moines de Fleury*, pour racheter un crime de son neveu*, le domaine se développe sur la viticulture. "Bientôt le château d' Aymon , près duquel s' élevaient le monastère et l' église , agrandi ou rebâti sur la colline de Châtillon , était devenu une forteresse redoutable ; sous sa protection venaient se grouper les habita tions et , à la fin du Xe siècle , cette agglomération constituait la ville et châtellenie de Châtillon sur-Loire"*. A partir du XIIe siècle, les seigneurs de Sully s'efforcent d'asseoir leur domination sur la ville. En 1225, "Barthélemi, 45ème abbé de Saint-Benoît, traita avec Henri, seigneur de Guilly (Loiret), des droits que ce dernier prétendait sur la justice de Châtillon-sur-Loire, moyennant 1 500 livres parisis et une terre nommée Villemenüe ; de sorte que l'abbé demeura en possession paisible de toute la terre de Châtillon"*. Au XIIIe siècle, les abbés de Fleury obtiennent la seigneurie de Châtillon qu'ils conserveront pendant quatre siècles. Suite a un conflit entre le roi et l'abbaye de Saint-Benoît au sujet de la nomination du chancellier Duprat comme abbé de Saint-Benoît, François Ier fit une cavalcade à Saint-Benoît afin de soumettre les religieux. "Le roi voulant éviter de semblables rébellions, et craignant sans doute ce mouvement des esprits que les nouvelles doctrines commençaient à agiter, ordonna la démolition de la tour du péristyle , qui rendait l'abbaye de difficile accès ; mais les moines obtinrent de la conserver dans l'état où elle est aujourd'hui. François Ier ordonna aussi la démolition de la tour et du château de Châtillon-sur-Loire, qui dépendaient de l'abbaye"*. Le château fort et le donjon seront rasés en 1528.
